Genetic mutation happens for a reason, evolution. What is the reason for companies changing DNA?

Do scientist really know the longterm effects, on an ecosystem, when altering a plants or an animals DNA?
The director of UK’s prestigious Rowett Research Institute has stated: “The perception that everything is totally straightforward and safe is utterly naive. I don’t think we fully understand the dimensions of what we’re getting into.”
And:
We have such a miserably poor understanding of how the organism develops from its DNA that I would be surprised if we don't get one rude shock after another."  -Professor Richard Lewontin, professor of genetics, Harvard University.

Not very comforting if you ask me. What do you think?

There is NO connection between saturated fat and cardiovascular (heart) disease

Swedish doctor Andreas Eenfeldt posted on his blog, Kostdoktorn, today (in Swedish):

To quote the famous Ancel Keys who is the main reason most westerners are terrified of saturated fat:
"People should know the facts. Then if they want to eat themselves to death, let them."
 That Ancel Keys' research got such a hold of Western diet is shameful.
